How to smoke ribs with my grill and smoker – first time?

Hello,

You have just entered the world of smoked meats. I know it seems like a daunting task but it is a wonderful skill once you develop it. The only thing you cook in the firebox is the occasional hamburger or hot dog. All meats to be smoked go in the grill section. I use two oven thermometers to track heat close to the fire and at the farthest point from the fire. This helps to get true temperatures so that you can cook faster or slower depending on the doneness of the piece of meat. The vent should pick up smoke from below the level where your meat sits so that the grill side has to fill with smoke before it starts to go out of the stack. If it is not built that way, then I would close it off some so that the smoke rolls around in the grill section before escaping.
