How to make tomato soup WW2 Style?
How can i make a tomato soup but the way they would have made it in WWII so with no electrical Appliances, a gas Cooker (1 ring and a grill) no blender pureé thingy combobulated whatsit ma hoogens nothing. Just simple utensils and a cooker. If you have a recipe then put it below and i will check if it fits in with the rations.
Same way you would make it today. Make a white or cream sauce(melt butter, add flour and cook on medium heat for 3-5 minutes, slowly add milk, water or cream or all 3 and whisk to combine ), add tomatoes and seasoning. If you want other vegetables, stir-fry them beforehand and add later. The tomatoes can be in the form of fresh tomatoes diced and cooked a bit first, canned diced tomatoes, pureed tomatoes, tomato sauce or tomato paste. All you need for this is one burner, a pot, a whisk.
Okay, I’ll take pity on you and give this recipe from my old Joy of Cooking, first published 1931. Not exactly the method I described above but gives soup just the same
Cream of Tomato Soup,
makes 5 and 1/2 cups
Simmer covered for 15 minutes:
2 cups canned or fresh cut up tomatoes
1/2 cup chopped celery
1/4 cup chopped onion
2 tsp sugar
Melt in a double boiler
4 Tbsp butter
Add
4 Tbsp flour
Scald and add
4 cups milk or milk and cream
Strain into this the tomato and vegetable stock. Season it with
1 tsp salt
1/8 tsp paprika
Place the soup over hot water for 15 minutes before serving.
