What is a convection oven, and do I want one?

My Caloric gas range is so old that the repair people seem to be having trouble finding parts for it any more (I think it was made in 1987). The oven finally quit on me the other day, so I’m shopping around for something new.

Convection ovens have an air movement system. They cook faster and sometimes you can use lower temperatures if the item needs the time as in Angel Food cakes.

If I were replacing my ovens now I am thinking I would go with Convection controls. They work both ways, conventionally and convection.

I really think you would like it once you got used to it.

I owned a bakery with an old Master Baker. It wasn’t technically a convection oven, rather the foods rotated within the oven. Same principal, the air is moving so cooking is more rapid.

You would just have to watch more closely for a while when using the convection features.
